The Rookery Gorse Mead is a sulphite-free mead containing only honey, water and freshly picked, local gorse flowers. Gorse is a wild growing bush commonly used as a natural boundary fence due to it’s thick growth and long sharp thorns, making it an ideal protective home for all sorts of small wildlife. The gorse bush is distinctive with it’s bright yellow flowers that grow pretty much all year round. The flowers are carefully hand picked by the Rookery team then fermented with honey to ceate this unique, moreish mead. The gorse creates an unusual, exotic flavour akin to pineapple and coconut, lending itself to a sweet, fruity taste. Can be enjoyed chilled in summer or room temperature in winter to give it added warmth.
